If I am maintaining one of my own edges, the bevel does not need to be set and the coarsest stone I would typically use is an 8k or koma slurry, but usually I just refresh on tomo slurry.
If the razor is new to me but appears OK and tests well, I'd probably start with the 5k Shapton Pro amd see how it goes.
If the razor is a worn eBay 'special' with no significant damage I'd likely start with a 2k Shapton Pro.
If the razor is a used European razor with a 'U' shaped bevel from decades of paste, I start with a 600 Chosera!
