Today is a bit of a first for me. I've smoked a few pork butts on my Weber NG and last weekend I broke in my first Father's Day present from my wife (a WSM) with a nice smoked turkey.
Today I'm smoking up a pair of pork butts on the WSM. First time I've ever tried to smoke multiple things at once. Currently have an approximately 9.5lb and 8.5lb butt sitting on the top rack of the WSM, hoping for a finished product by 6ish pm.
Rubbed the butts yesterday with a rub I've used multiple times and seems to be a hit. Up at 445 this morning to start the charcoal and get those butts on. Took a bit to get the charcoal going as it was fairly windy. The butts finally went on about 520.

Unfortunately that's the last pic for many hours!
I'm using Canada Leaf briquettes and Macleans Bourbon case wood chunks. After an hour I think I've got the temp steady between 250-270, right where I want it. Previously I've kept the gas grill at 225ish but I've been doing lots of reading and it seems anything under 275 is acceptable.
