Yesterday when I got home from work I was out of food and due to Christmas and then my uncle dying out of the blue the day after and having to make a 600 mile trip for the funeral I had to shuffle some bills around, so I was flat broke, but finally caught up and thankfully friday is payday. So I took stock of what I had in the freezer and pantry. I had a jar of tomatoes, a can of corn, 2 onions, a bag of pinto beans, some frozen ham hocks that had been in the freezer who knows how long. There was some other stuff in there like cereal, vinegar, oatmeal, and stuff like that but nothing that could make a decent dinner.
So I threw the ham hocks in the crock pot to defrost while I boiled the beans and chopped the onions, then I drained the beans added the onions, tomatoes some salt and pepper, and water. Then I looked at the corn and said why not so I dumped that in there too. 4 hours later I had a meal, and a pretty darn good one too. I think that is the best ham and beans I have ever had, and I grew up eating ham and beans quite often.
