I baked these muffins for breakfast.
No flour. Low carb.
Great for this insulin dependent diabetic!
Egg, goat cheese, a few dried cranberries, Colby Jack cheese, tomato, finely diced ham, and onion.
I baked them for 25 minutes at 425.
They turned out pretty good and didn't spike my blood sugar.
I have heard of fritada and quiche and I guess this is something like it but for this one I pulled the recipe out of my head. I got to thinking about something different for breakfast this morning which is normally dangerous but this turned out okay!
Here in South Texas a typical meal is a meat, tortillas, rice, and beans for dinner. Breakfast is egg, a meat, beans, and tortillas.
While being incredibly delicious it doesn't work for me.
I haven't posted any meals in quite a while so I thought this one was as good as any.
