Over the weekend I did my first 3-2-1 on a set of Spare Ribs I trimmed St. Louis style. Other than wrapping the ribs and adding cola, they were exactly the same as a second set I did unwrapped (Cook Time, Rub, Temp, Whispering Sweet Nothings, etc, etc.) I'll have to say, we unanimously preferred the unwrapped ribs in both taste and texture. The wrapped ribs were good, but too soft, and not as flavorful as the other rack. To the non BBQ aficionado they would probably be an 8/10, and while the effort is minimal I just don't get the added benefit.
