You could use a temperature probe and finish at 198 or so....but I'll just cook to feel. Also, if the bone comes out easily then it's done. As a starting point I would cook at 250-275 for every pound of pork.
Don't rule out cutting them in large chunks and placing them in a slow cooker. You could add an onion and some garlic for added flavor.
