I've been making a lot of pho lately and so I start with about 5lbs of beef bones that I cook in the oven for about an hour before putting them in the pot. The baking sheet I cook them on ends up with a lot of grease that I pour out into foil to let it harden so I can discard it. But as I'm looking at it today I'm thinking "maybe I can cook with this stuff"...any opinions on that? I looked online for a minute and came away a little confused as to whether I need to render it or use as is.
I will also have a nice thick layer of fat that will come off the top of the broth after its in the fridge all night. What about that? Any good? I'm assuming this would be delicious to fry with but maybe it's garbage.
