I am going to be smoking a Rollade tomorrow. Total weight is 1.66 kg or about 3.5 lbs. It is a rolled roast, 50% beef, 50% pork. Thoughts on how long it should take at 200F? Will be doing a straight pork loin, too, but that is pretty standard.
I am thinking about 4 hours tops.
Brining it in a mixture of molasses, vanilla, whisky, and Worcestershire sauce (salt too, but not so much).
