Gents, I know this has become a bit of a rage in certain places and it is rather fascinating, if not exactly a new concept. I liken it to bowties. It is just another example of classic, proven things not really becoming obsolete but only forgotten for awhile.
Anyroad, my wife and I had a chance to try a plate at Hearth 25 in Ogden Utah. They made a really nice job of it and the terrine was superb. So, I have fairly limited knowledge of the entire culture surrounding it but grasp enough...
